Quarter Hog*:
5 lbs of bacon
6 pork chops (2/package; 3 packages)
4 boneless pork steaks (2/package; 2 packages)
1-2 roasts totaling at least 6 lbs (Boston Butt, Shoulder, Cushion, etc.)
1 ham steak
1 pork shank
3 lbs sliced deli ham (1 lbs packages)
3 lbs breakfast sausage (1 lbs packages)
1 lbs fresh (frozen) chorizo sausage
2 lbs Italian sausage (1 lbs packages)
Half Hog*:
10 lbs of bacon
12 pork chops (2/package; 6 packages) (suggestion: substitute a portion for a bone-in rack for the holidays!)
2-3 roasts totaling at least 11 lbs (Boston Butt, Shoulder, Cushion, etc.)
7 lbs half ham
Tenderloin (1 package)
Spare ribs (1 package)
4 lbs sliced deli ham (1 lbs packages)
6 lbs breakfast sausage (1 lbs packages)
2 lbs fresh (frozen) chorizo sausage
3 lbs Italian sausage (1 lbs packages)
Optional, please request: bones (5 lbs), heart (1 package), liver (1 package), and kidney (1 package)

The meat is frozen when we package it, and we put it in a cooler with ice packs for shipment. Depending on your location, it may arrive frozen or partially thawed. You can refreeze the meat upon arrival or put it in your refrigerator to thaw.
